Presumably a reference to the peak's looming shape or distinctive profile. In Greek mythology, the Minotaur was a half-bull, half-human offspring of King Minos of Crete and his wife Pasiphae, who was concealed in the Labyrinth, a specially-constructed and convoluted prison of sorts, on the island of Crete.
